How to Identify High-Quality Frozen Fish

The first thing to check is the ice glaze and skin condition. Properly flash-frozen fish should have a firm, glossy skin with no visible frost burn — the dull, white patches that appear when fish has been thawed and refrozen or stored improperly. Frost burn is one of the clearest signs of a broken cold chain.
Next, look at consistency of size and grading within a batch. Mixed, inconsistent sizing in a single carton is often a sign of a rushed or unregulated supply chain.
Smell is also a reliable indicator, even through packaging. Properly frozen fish should have little to no odour. A strong ammonia-like or sour smell — even faint — usually signals the fish began to spoil before it was frozen, and freezing will not reverse that.
